Recipe for Kwetiau Fried Chicken that is Savory and Bounces for Iftar

kwetiau is one of the popular types of noodles that is delicious fried or given a broth. Made from rice flour and starch, kwetiau can be a substitute for rice for iftar.

With an egg filling, a little chicken and vegetables, fried kwetiau can be a delicious meal when breaking the fast. Complete with pickles and fried shallots to make it even more solid.

Material :
  • 500 g wet kwetiau
  • 3 tbsp vegetable oil
  • 1/2 tsp sesame oil
  • 2 cloves of garlic, chopped halua
  • 100 g chicken, cut into small pieces
  • 50 g mustard leaves, cut into pieces
  • 2 chicken eggs, beaten
  • 2 tbsp sweet soy sauce
  • 1 tbsp soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp mushroom broth
  • 1/2 tsp pepper powder
  • 1 tsp salt
How to Make Kwetiau Fried Chicken:
  1. Rinse the kwetiau with warm water then drain.
  2. Heat the oil and sesame oil and fry the garlic until fragrant.
  3. Add chicken, stir until stiff.
  4. Add the mustard greens, stir until wilted, set aside the stir-fry on the edge of the pan.
  5. Pour the beaten egg on the other side and stir until it’s small.
  6. Enter the kwetiau, add oyster sauce, sweet soy sauce, soy sauce, mushroom broth, pepper and salt.
  7. Stir quickly until well blended and slightly dry.
  8. Remove and serve warm.

Tips for making Kwetiau Fried Chicken:

1. To get kwetiau which is soft, use fresh/wet kwetiau of good quality.
2. In addition to chicken meat, beef balls or fish balls can be used as filling.
