Recipe for Spicy Crispy Potato Fried Sambal Without Coconut Milk


Potatoes wrapped in this spicy seasoning can be a delicious side dish for Eid. Fluffy potatoes covered with spicy kicks. Goes well with chicken stock.

Fried chili Potatoes are a popular side dish for lontong opor Eid. Usually combined with beef liver, chicken liver and gizzard or small shrimp and petai. The spicy savory taste goes well with the savory opor sauce.

To get a savory taste, coconut milk is usually added. It just doesn’t last long. You can mix potato fritters without coconut milk. It still tastes good.

Material :
  • 1 kg potatoes, peeled
  • cooking oil
  • 2 cm galangal, bruised
  • 2 bay leaves
  • 3 lime leaves
  • 2 tbsp ebi, soak until soft, finely mash
  • 1 tsp sugar
  • 1/2 tsp pepper powder
  • 2 tbsp powdered chicken stock
  • Ground spices:
  • 100 g curly red chili
  • 10 pieces of curly red chili
  • 10 red onions
  • 8 cloves of garlic
  • 1 tsp fried shrimp paste
  • 2 tsp salt
How to Make Potato Fried Sambal:
  1. Cut the potatoes into cubes and soak in cold water.
  2. Fry the potatoes until cooked and slightly dry then drain.
  3. Heat 100 ml of oil in a frying pan, saute ground spices until fragrant and cooked.
  4. Add the finely ground ebi, lime leaves, bay leaves and galangal, mix well.
  5. Add the fried potatoes, sugar, broth and pepper, stir until combined.
  6. Add 100 ml of water and cook until the water is reduced and the spices are absorbed by the potatoes.
  7. Remove and serve warm as a side dish of ketupat.

Tips for making Potato Fried Sambal without coconut milk:

1. For fried chili potatoes, choose potatoes that are old and have no rotten parts. Peel clean and soak in cold water so it doesn’t brown.
2. Do not fry the potatoes too dry, so that the texture remains fluffier and the spices can seep in.
