Spicy Anchovy Sauce Recipe for an Appetite

Material :
  • 100 g unsalted anchovies
  • 100 g peanuts
  • 2 bay leaves
  • 3 lime leaves
  • 2 cm galangal, bruised
  • 1 tsp sugar
  • 1 tbsp powdered chicken stock
  • Ground spices:
  • 5 pieces of curly red chili
  • 2 large red chilies
  • 5 pieces of red chili
  • 7 red onions
  • 4 cloves garlic
  • 1 tsp fried shrimp paste
  • 1/2 tsp salt
How to Make Peanut Anchovy Sauce:
  1. Fry the anchovies and peanuts separately until dry and cooked then drain.
  2. Heat 5 tablespoons of vegetable oil, saute ground spices until fragrant and cooked.
  3. Enter the bay leaves, lime leaves, galangal, sugar and powdered broth and stir until smooth.
  4. Add the anchovies and nuts, stir until well combined.
  5. Remove and cool.
  6. Store in a closed container.
